Raw Vegan Double Layer Ice Cream Cake (guilt free and refined sugar free):
Ingredients: Vanilla Ice Cream layer (1st layer)- 2 cups of cashews, 2 bananas, 1 cup of dates (if not juicy enough soak them over night), 1/4 cup of melted coconut oil, 1 T vanilla extract, a dash of coconut water (more if needed).
Berry-mania Ice Cream layer- 1 cup of frozen blueberries, 1 cup of frozen strawberries, 1 cup of coconut water, 1 banana, again use a dash or two of coconut water as needed
Toppings - 10 strawberries, 1 pack of blueberries, 1 pack of raspberries, 1 pack of wild berries (and any other additional fruit of preference)
Recipe: In a spring pan preferably ( I didn’t have one), cut 10 strawberries in half and place along the edge. Next, we’re going to blend up the 1st layer (vanilla ice cream layer). Put all the ingredients in a blender, then first press “chop” then “puree” until you get a smooth texture. Try to add as little coconut water as possible. Once done blending, spread the mixture to the bottom of the pan which should stick the strawberries to the edge. Set pan aside. Now, let’s do the second layer (Berry-mania ice cream layer)! Woohoo! Rinse your blender. Now throw in all ingredients for the 2nd layer. Blend until smooth. Spread the mixture on top of the 1st one. Top and decorate with the fruits for the toppings. Be creative. Show some love ;) Most importantly smile when you’re making it, it will make your cake taste a lot better.. promise! So now carefully place pan in freezer for about 2-3 hours. Take it out of the freezer and let it sit at least 20 mins before serving. Namaste
